Richard Haywards Oysters ~ These are baroque in shape because they grow freely with little to no intervention. They are full bodied, more meaty and purified with sea water so have a crisp sweet yet salty fresh sea air flavour. Steeped in history as 8th generation Oyster Farmers. Great with sweet red wine mignonette and Tabasco and a bottle of their home grown Stout.
Louet Feisser Oysters ~ These are more uniform in shape because they are nurtured in buoyant bags allowing them to turn with the tides. They have a smoother teardrop shape, caramel coloured shell. They are also sweet and nutty, salty and fresh, but also have a more unique, rich distinctive flavour, similar to a scallop. Great with lemon, black pepper and a glass of fizz.
Carlingford Oysters ~ These are slightly more regular in a classic oyster shape because they are turned by hand in the sea. They are crisp, sweet, slightly nutty with a pleasant lingering aftertaste. Great with white wine mignonette and Tabasco and a pint Guinness!
